Elderberry Jelly



This homemade elderberry jelly is a delightful and versatile spread. It's perfect for muffins, toast, or as a condiment. The natural sweetness of elderberries combined with a touch of lemon juice makes for a delicious jelly.

Ingredients:

  • 4 cups elderberries
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1 package 1
  • 75 oz fruit pectin
  • 5 cups granulated sugar

Instructions:

After giving the elderberries a good rinse, remove the stems

Put the elderberries and water into a big pot

After bringing to a boil, lower the heat, and simmer the berries for fifteen minutes while mashing them with a potato masher

To extract the juice, strain the berry mixture through cheesecloth or a fine-mesh sieve

Two cups or so of elderberry juice should be consumed

Pour the juice back into the pot and stir in the fruit pectin and lemon juice

Mix thoroughly

Stirring continuously, bring the mixture to a rolling boil over high heat

Stir thoroughly and add the granulated sugar all at once

Heat the mixture until it reaches the desired consistency, about one to two minutes

After turning off the heat, remove the pot and skim any froth from the top

Leaving a 1/4-inch headspace, ladle the hot elderberry jelly into sterilized jars

Use sterile bands and lids to seal

To make sure the jars are properly sealed, process them for ten minutes in a water bath canner

The jelly will solidify as it cools, so let the jars cool

Keep the container cold and dark
