Slow Cooker One Pot Lasagna Bolognese



This Slow Cooker One Pot Lasagna Bolognese is a convenient way to enjoy the flavors of classic lasagna with minimal effort. The slow cooker does all the work, resulting in a hearty and comforting meal perfect for busy weeknights.

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can 28 oz crushed tomatoes
  • 1 can 6 oz tomato paste
  • 2 cups beef broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish optional

Instructions:

In a skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and onions are translucent

Drain excess fat

Transfer cooked beef mixture to slow cooker

Add crushed tomatoes, tomato paste, beef broth, dried basil, dried oregano, salt, and pepper

Stir to combine

Cover and cook on low for 6-8 hours or on high for 3-4 hours

About 30 minutes before serving, stir in broken lasagna noodles

Cover and continue cooking until noodles are tender

Once noodles are cooked, dollop spoonfuls of ricotta cheese over the top of the lasagna

Sprinkle with shredded mozzarella and grated Parmesan cheese

Cover and cook for an additional 10-15 minutes, or until cheese is melted and bubbly

Garnish with fresh basil leaves if desired before serving
