Quinoa Power Bowl



This Quinoa Power Bowl is perfect for busy women who are trying to lose weight because it is quick and easy to make. This meal has a good balance of protein, fiber, and important nutrients because it is made with healthy foods.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, thinly sliced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

In a medium saucepan, combine quinoa and water

Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed

Fluff with a fork and set aside

In a large mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell peppers, red onion, feta cheese, and Kalamata olives

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper

Drizzle the dressing over the quinoa mixture and toss until well combined

Divide the quinoa mixture into 4 serving bowls

Garnish with fresh parsley and serve immediately
