Baked Tofu with Mushrooms



This recipe for Baked Tofu with Mushrooms is a tasty and easy weeknight supper option. As the tofu and mushrooms bake in the oven, they absorb the savory flavors of the ginger, garlic, and soy sauce, making for a very filling meal.

Ingredients:

  • 1 block extra-firm tofu, pressed and sliced
  • 2 cups mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Green onions, chopped, for garnish

Instructions:

Preheat the oven to 375F 190C

In a bowl, whisk together soy sauce, olive oil, sesame oil, ginger, garlic, salt, and pepper

Place sliced tofu and mushrooms in a baking dish

Pour the soy sauce mixture over tofu and mushrooms, ensuring they are evenly coated

Bake in the preheated oven for 25-30 minutes, or until tofu is golden and mushrooms are tender

Garnish with chopped green onions before serving
