Ingredients:
- 1 cup 2 sticks unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semisweet chocolate chips
- 1/2 cup chopped walnuts optional
- 1/2 cup confectioners' sugar
- 1/4 cup heavy cream
- 1 teaspoon instant coffee granules optional
Instructions:
Melt the butter and mix it with the white sugar and brown sugar in a large bowl until the mixture is light and fluffy
One at a time, add the eggs and beat well after each one
Add the vanilla extract and mix well
All-purpose flour, cocoa powder, baking soda, and salt should all be mixed together in a different bowl using a whisk
Slowly add the dry ingredients to the wet ones and mix them together until they are just combined
If you want to use them, fold in the chopped walnuts and semisweet chocolate chips
Put the cookie dough in the fridge for at least an hour with plastic wrap over it
Warm your oven up to 350F 175C and put parchment paper on two baking sheets
Using a cookie scoop or a tablespoon, drop round pieces of dough onto the baking sheets that have been prepared, leaving space between each cookie
Put it in the oven for 10 to 12 minutes, or until the edges are set
The middles will still be a little soft
After baking, let the cookies cool for 5 minutes on the baking sheets before moving them to wire racks to cool all the way
For the filling, put the heavy cream, confectioners' sugar, and instant coffee granules if using in a bowl and mix them together
Mix the ingredients together until they are smooth and creamy
After the cookies have cooled, put a lot of filling on the flat side of one and then put another cookie between them
Do the same steps for the other cookies to finish filling and sandwiching them
