Cashew Shrimp Cauli-Fried Rice



A delicious and wholesome Paleo dish with crunchy cashews, colorful bell peppers, cauliflower rice, and shrimp that are all seasoned with coconut aminos, ginger, and garlic.

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 head cauliflower, grated
  • 1 cup cashews, chopped
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tbsp coconut aminos
  • 2 tbsp sesame oil
  • 2 tbsp olive oil
  • 1 tbsp ginger, grated
  • Salt and pepper to taste
  • Green onions for garnish

Instructions:

In a large skillet, heat olive oil over medium heat

Add garlic and ginger, saut until fragrant

Add shrimp and cook until pink, then remove from skillet and set aside

In the same skillet, add sesame oil and cauliflower rice

Cook for 5-7 minutes until cauliflower is tender

Push cauliflower rice to one side of the skillet and pour beaten eggs onto the other side

Scramble the eggs until cooked through, then mix with the cauliflower rice

Stir in coconut aminos, bell pepper, and chopped cashews

Cook for an additional 2-3 minutes

Add cooked shrimp back to the skillet, stir until everything is heated through

Season with salt and pepper to taste

Garnish with green onions before serving
