Peanut Butter Quinoa Cookies with Whole Wheat Flour



These Peanut Butter Quinoa Cookies are a delightful treat that combine the goodness of whole wheat flour and cooked quinoa, enriched with the creamy flavor of peanut butter and the natural sweetness of maple syrup.

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup whole wheat flour
  • 1/2 cup creamy peanut butter
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, combine cooked quinoa, whole wheat flour, peanut butter, maple syrup, melted coconut oil, vanilla extract, baking powder, and salt

Stir the mixture until well combined

Fold in the dark chocolate chips

Scoop spoonfuls of cookie dough onto the prepared baking sheet, spacing them apart

Flatten each cookie slightly with the back of a fork

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown

Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
