This Sweet and Savory Cucumber Summer Fruit Salad is a delightful paleo and vegan-friendly salad that combines the refreshing crunch of cucumbers with the sweetness of strawberries, blueberries, and mango. The addition of fresh herbs, roasted almonds, and pomegranate seeds adds a burst of flavor and texture. It's the perfect dish for a light and healthy summer meal.

Ingredients:

  • 2 cucumbers, sliced
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup mango chunks
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup chopped roasted almonds
  • 1/4 cup pomegranate seeds
  • Salt and pepper to taste

Instructions:

Sliced cucumbers, strawberries, blueberries, chunks of mango, and red onion should all be put in a large bowl

Give the fruits and vegetables a light toss to mix them

Put some fresh mint leaves, basil leaves, and a pinch of salt and pepper in a small bowl

Mix them together to make the dressing

Pour the dressing over the salad and toss it around to cover everything evenly

To make the salad more interesting and tasty, sprinkle chopped roasted almonds and pomegranate seeds on top
